Katharina Zott studied enology in California and earned her doctorate in Bordeaux. For the love of the craft, she gave up her scientific career and took over her family’s distillery. This is located in Ustersbach, Bavarian Swabia. Her family has been farming there since 1530. Katherina exclusively processes fruit from her own cultivation. CO-FERMENTATION is the name Katharina uses for a range of experimental fruit Eau-de-Vies she makes for Freimeisterkollektiv. “The interpretation of a classic ‘Obstler’ without being one.”, Katharina says. By fermenting different fruit varieties together she creates multifaceted and exciting flavour profiles.

Preparation For CO-FERMENTATION 262, Katharina fermented blackcurrants, sour cherries and apples together with raspberry juice. As she only uses strained fruit for this distillate, she deliberately plays with subtle fruit flavors and achieves a high level of complexity. Her many years of experience and great skill give her an idea of the result. This fruit brandy takes us on a journey of taste. On the nose, we first recognize violets and raspberries. On the palate, you can taste cardamom, white chocolate and black tea. An exciting rollercoaster ride in which each ingredient flashes aromatically, only to be immediately replaced by the aromas of the other ingredients.
